Client is open-minded, but a combination of something that represents the meaning of "One" and "Union" should be included.
Both words (One and Union) have a significant meaning and should be captured in the logo.
You may use "1" in the logo.

The brewery will be located in New Brunswick Canada.
Include elements and colour scheme of the NB flag in design.
Include Canadian Maple Leaf in design. (optional)

Please keep in mind that this will be printed in form of labels, stickers and other miscellaneous advertising. Design should get the message across but not be too cluttered.
