Hi, I have done a similar project for a Pune based company. There they needed to extract entities like pan number, address etc. You project is somewhat similar to that. We can use the google cloud vision, opencv and Python to extract the text. This unstructured text will be converted to structure text and entities using NLTK. Please feel free to discuss the details.
