I've already coded an 3-axis Accelerometer data process, in my case was the ADXL345, I used it an Industrial Environment for Machine Vibration, and I had to do the Fourier Transform etc, and then render it as a Web Page. I think your problem has the similar solving. I’m going to prepare your acc datasets (I can help you to collect data correctly). Next I’ll train model classification. 85% of the observations to train a model that classifies the five types of cattle activities and 15% of the observations to validate the trained model. For classification I propose to use Boosted trees.

Hi, This is a very interesting project and something I would be very comfortable working on. For my thesis project back in the days I had developed an algorithm that could differentiate between various postures and activities in humans using 3 similar accelerometer sensors attached to a human's leg.
