Build a software that can scan a multiple pdf at once and convert it to single excel workbook.

we can use java and Apache poi and pdfbox to do this. I am assuming this program will run locally, fetch pdf files from a folder on pc and parse them, create an excell file from the data parsed from pdf. to do a poc, I might need pdf sample which we need to parse and a sample excell file which will demonstrate what would be the probable output.
