18402 hide items from dropdown

Items are shown in a dropdown that are related to records. When a customer selects an item and submits it, the record fields fill a text form. When the form is submited the record is stored in session varibles. I want the item in the dropdown to hide when is is found in the session variables. So the user sees one less item in the dropdown as they are used. Small Job.
