Magento category view customization

I need an edit to Magento category view, some defined categories must be displayed in a similar way as this website [url removed, login to view]
That means a table that can be sorted by the customer, with a quantity selector on the right and add to cart button.
I don't really need the table to be generated dynamically, I just need a static one that I can update using html if needed.
I also need to be able to retain the usual category views (list, grid) for the categories where this new display won't be needed.
