This is what I do for a living right now - automatic recognition of the materials on the cutting table, so since your project is so simple I already have it done in some way, tried it with your image and it worked (in OpenCV 2.4 but I can deliver it in whatever version you like). Just to be sure, I would like to get more images, to be sure, that the algorithm is working well, also it is important, if the lighting conditions and the material structure would be same on all images, or it will vary and therefore need some parameters. If you will be satisfied with my work I would happily develop other features for you as well.

I have developed OpenCV programs before, and now have an algorithm prototype in mind. The program will be fast and accurate, and can (hopefully) achieve high precision you needed.
