I have a question, which is what do you mean by simulated rollback. Do you mean a go back in time feature?
I also noticed in the first video the entities are not using the A* pathfinding algorithm, which means they won't be taking the shortest path from A to B.
My suggestion is you give me the game ideas you have, and I will give you a quote on the expected delivery time and cost, and I can guarantee that your game will feel like a AAA game.
